One of the easiest recipes to make, so delicious, filling and healthy. People often associate tacos with meat, but this recipe uses all the same spices, but with whole, plant based foods instead 

 

For this recipe you will need

- greens (I chose spinach, but you can do kale, iceburg lettuce, romaine, whatever you like)

- 1 can no salt added black beans

- 1 bell pepper (I like red), diced

- 1/2 onion, diced

- 1 package low sodium taco seasoning

- 1 tbsp chili powder

- vegan cheese 

 

In a skillet, heat up 1 tbsp olive oil. Add in diced peppers and onions and cook till soft. Pour in blackbeans, chili powder and 1/2 packet of taco seasoning, cook 4-5 minutes then remove skillet from heat

In a bowl, pour taco mixture over bed of veggies. Add salsa and guacamole, cheese on top and ENJOY!!

*You can feel free to enjoy this taco mixture in shells, soft shell fajitas, but I choose to enjoy it over salad to get some added greens into my daily meals.
