One of my favourite parts about being vegan is how much it has forced my cooking abilities to grow and develop. So often, we can rely on animal products like butter, cheese and meat to add flavour to our food, without putting much else into it. Veganism has made me learn, research, and develop new ways of thinking about (and creating) meals, and I am so thankful to have learned that skill.
This meal is by far one of my favourites to make for non-vegans. The look, taste and smell, is so identical to pulled pork, that once you explain it is not, your friends and family will be truly shocked!!
Let's start with introducing you to the main ingredient in this recipe, Jackfruit. Jackfruit is the largest tree-borne fruit in the world, with one fruit weighing upto 100lbs. They contain seeds that are rich in protein, calcium, potassium and iron. The fruit is harvested and then canned, and shipped around the world for all of us to enjoy!
You can pick up cans of jackfruit at some grocery stores, especially asian food markets, and stores with larger ethnic food sections. You can contact your local stores to find if they sell the fruit.
Once you have bought your cans of jackfruit, you pretty much follow any pulled pork recipe you enjoy and get cracking!! I like a sweeter pulled pork flavour, so I buy BBQ sauce (or even better, jarred pulled pork sauce) and follow this recipe:
- Add 2 cans of drained and rinsed jackfruit, with 1 1/2 cups of BBQ sauce, one chopped onion and one bell pepper to a slow cooker.
- Set on low for 5-6 hours, then shred fruit (YUP, believe it or not, it shreds just like pulled pork, it will blow your mind!) and then cook again for 1-2 more hours.
Serve as you would with any pulled pork sandwich and ENJOY! You will fool your friends, and your tastebuds, with this amazing new creation!
